Winter weekends are made for relaxing mornings spent cooking together. This griddle-style classic of fried eggs and crispy hash browns keeps things simple and satisfying. Made with Nellie’s Free Range Eggs, it’s an easy breakfast to make side by side in the kitchen, but it’s even better when you take it outside to the flat top grill.

Instructions

  1. Heat a large skillet, griddle, or flat-top grill over medium-high heat and add 1 to 2 tablespoons of the oil or butter.
  2. Spread the hash browns into an even layer and season lightly with salt. Cook, undisturbed, until golden and crispy on the bottom, 5 to 7 minutes. Flip and cook until the second side is crisp and cooked through, another 5 to 7 minutes. Transfer to a plate and keep warm.
  3. Reduce heat to medium and add the remaining oil or butter. Crack the eggs into the skillet or onto the grill and season with salt and pepper. Cook until the whites are set and the yolks are cooked to your liking.
  4. Serve the fried eggs alongside the crispy hash browns while hot.

This simple breakfast works just as well cooked outdoors on a grill as it does indoors on the stovetop, making it easy to adapt to the season and your setup.
