This quick egg and tortilla wrap is built for those in-between winter moments when everyone needs a little fuel before heading back outside or settling in at home. Warm, comforting, and endlessly adaptable, it comes together with Nellie’s Free Range Eggs, melty cheese, and creamy avocado for a simple bite that feels just right.

Instructions 

  1. Heat a nonstick skillet over medium heat and lightly coat with oil or butter.
  2. Crack the egg into the pan and gently break the yolk, spreading it slightly to create an even layer. Season with a pinch of salt.
  3. While the top of the egg is still wet, place the tortilla directly on top of the egg and press lightly so it sticks together.
  4. Once the egg is set and the tortilla is warmed through, carefully flip so the tortilla is on the bottom of the pan.
  5. Place the slice of cheddar on the egg side and let it melt slightly.
  6. Remove from the pan, top with sliced or mashed avocado, and fold the wrap in half. 
  7. Add an optional sprinkle of red pepper flakes for added heat. 

Serving Tip 

Serve warm as a quick snack or light meal. This wrap is easy to double or customize with your favorite fillings.
