Ingredients
For each pizza:
- Cooking spray or 1 teaspoon butter to grease the pan
- 1 nine-inch tortilla
- 2 Nellie’s Free Range Eggs, medium-hard boiled, peeled and finely chopped
- Approximately 1 cup total toppings of your choice:
- Cherry tomatoes, halved
- Onion, chopped
- Bell pepper, chopped
- Fresh basil or herbs, chopped
- Breakfast sausage, crumbled
- Bacon, crumbled
- ½ cup shredded cheese (cheddar, pepper jack, and mozzarella all work well)
- Marinara sauce or ketchup for serving

Instructions
- Preheat the oven to 350° and spray a 9-inch cake pan with cooking spray or grease with butter.
- Place tortilla into the bottom of the cake pan.
- Crack 2 Nellie’s Free Range Eggs into the pan on top of the tortilla. Scramble with a fork, if you like.
- Sprinkle your choice of toppings all over the top and layer cheese over toppings.
- Bake for 10-12 minutes or until the eggs are to your desired doneness.
- Serve with marinara sauce or ketchup for dipping.
