Whether you're on the road, packing lunchboxes for the day, or hosting a party, it's important to include something yummy and healthy for the kids. And let's face it: quinoa isn't exactly a kid-favorite. But thanks to the cheesy filling and the way these egg bites crisp up in the oven, you might have a new go-to recipe on your hands for any occasion.

Ingredients

  • 2 cups cooked quinoa
  • 2 cups cheddar cheese, shredded
  • 2 cups of cooked veggies of your choice
  • 2 Nellie's Free Range Eggs
  • 1 teaspoon kosher salt

Directions

  • Preheat oven to 350F.
  • Spray a mini muffin pan with cooking spray.
  • In a deep bowl, mix all ingredients until well combined.
  • Divide the mixture evenly in the mini muffin pan. Make sure you press down to pack it in firmly.
  • Bake mini muffins for 15-20 minutes until golden brown and crispy. Note: every oven is different. It took about 20 minutes for my quinoa bites to get brown and crispy. Enjoy!

Can these be made with something other than quinoa?

Great question Brenda. Brown rice, barley, or couscous may be an adequate substitute, but we haven't tried them ourselves. We'd love to hear how it goes if you do!

Could you make these regular-muffin sized? About how many do you think this recipe would make?

Hi Susan! We haven't made larger cups but are sure you could do that. This recipe would likely make about 6-8 regular-sized muffins.
