Ingredients

For the scrambled egg pancetta:

  • Nellie's Free Range Eggs, lightly scrambled
  • White onions, diced
  • Pancetta, lightly sautéed
  • Freshly ground black pepper to taste

For the vegetarian:

  • Nellie's Free Range Eggs
  • Fresh spinach, chopped
  • Tomatoes, diced
  • Shredded white cheese blend
  • Garlic, minced

For the ham and mushroom:

  • Nellie's Free Range Eggs
  • Mushrooms, diced
  • Ham, diced
  • Green onions, sliced

For the bacon and cheddar:

  • Nellie's Free Range Eggs
  • Bacon, cooked and diced
  • Bell peppers, diced
  • Cheddar cheese, shredded

Directions

  • Preheat grill to 400F.
  • Grease muffin pan. Crack an egg in each muffin compartment. If making the scrambled egg pancetta, lightly beat the egg after cracking it into the muffin pan.
  • Sprinkle the remaining ingredients for the type of muffin you're making over the top of each egg. You can make all four recipes or just pick your favorite one! Ingredient amounts will depend on how many you make of each muffin type.
  • Carefully place entire muffin pan on grill and cook for 6-8 minutes. Check periodically and use a fork or butter knife to remove egg muffins from muffin pan when whites are set and yolks are cooked to your liking. Serve to your family in the backyard for a fun and easy breakfast for dinner!

I love this!! Can these be prepared ahead of time or are they best fresh? Anyone tried using a mini muffin pan?

Nellie's

These taste best fresh, but can be refrigerated for 3-4 days after cooking to be enjoyed later. We love the idea of mini muffin tins, let us know if you try it!

I LOVE NELLIE'S BROWN EGGS. we are able to recycle the "cartons" . Better than the egg Styrofoam ones as they are garbage in our area!. Always looking for a coupon for Nellie's.

After you have preheated the grill what temp do you cook on for 6 to 8 mins??

Nellie's

Hi Cynthia! Once you preheat the grill to 400 degrees, you'll want to keep it right around that temp to cook the eggs. We hope you enjoy!
