  • Position rack in the middle of the oven and preheat to 400F. Grease a muffin tin with nonstick spray.
  • In a medium bowl, beat the eggs. Add the Greek yogurt and milk and mix to combine. While whisking, slowly add the melted butter to the bowl.
  • In a large bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt.
  • Add the wet mixture to the bowl with the dry mixture. Gently mix the batter until just combined.
  • Divide the cornbread batter evenly among each muffin cup, filling each cup about three-quarters full.
  • Bake for 18 minutes, or until muffin tops are golden brown and a toothpick inserted in the center of a muffin comes out clean.
  • Serve warm with Nellie's Free Range Sea Salted Butter and enjoy!

Would leaving out the sugar change the texture in a negative way?

Hi Shirley! Many cooks would argue that sugar has no place in cornbread/cornbread muffins(and many recipes do not include adding sugar), so it's entirely up to you whether you add it to yours or not!
