A colorful salad to brighten your day!

Pull off a successful (and not to mention delicious!) Meatless Monday with this 100% vegetarian Southwest salad, complete with a quick and easy homemade Southwest ranch dressing. Thanks to the addition of protein-packed hard-boiled eggs and a plethora of classic Tex-Mex additions including grilled corn, avocado, black beans, and tortilla strips, you'll walk away from this meal feeling satisfied and with a new favorite recipe in your back pocket.

To make the Southwest dressing

  1. In a medium bowl, whisk together all ingredients for the Southwest dressing until well combined (see notes). For a slightly thinner consistency, add a splash of water or milk. Set aside in the fridge while you make the salad.

To make the Southwest salad

  1. Add lettuce to a large bowl and top with the avocado, corn, tomatoes, black beans, hard-boiled eggs, green onions, and red onion. Garnish with cilantro and tortilla strips if desired.
  2. Transfer salad to individual bowls and serve with a lime wedge and a drizzle of Southwest ranch dressing.
