In just a couple of minutes, a Nellie’s Free Range Egg turns a packet of hot cocoa into a soft, spoonable chocolate cake with real structure and richness. Instructions

1. Place butter into a coffee mug and microwave for 20-30 seconds to melt.
2. Remove the mug from the microwave, and crack one Nellie’s Free Range Egg directly into the mug with the butter.
3. Pour one packet of hot chocolate mix into the mug and stir vigorously to combine well.
4. Add chocolate chips, if using.
5. Microwave for 40-55 seconds or until chocolate cake mixture has structure but is still gooey.
6. Remove from the microwave and top with whipped cream, mini marshmallows, chocolate sprinkles, and/or raspberries.
