A little spooky, a lot of silly, and almost too cute to eat! These Halloween avocado toasts turn everyday breakfast ingredients into Frankenstein-inspired faces using colorful veggies and Nellie's Free Range Eggs. Get creative with the expressions, mix and match your toppings, and let everyone build their own breakfast monster.

Instructions

  1. Prepare the base. Lightly toast the whole wheat pitas until warm and slightly crisp. Mash the avocado with a pinch of salt and pepper, then spread generously over each pita to create your monsters' green faces.
  2. Get your toppings ready. Slice the hard-boiled eggs into rounds for the eyes. Cut black olives into small pieces, triangles, or rounds for pupils, hair, and other facial features. Slice cucumber into strips for eyebrows, mouths, or other details. Prepare shredded carrot for stitches or wild monster hair, and cut strips and small pieces of red bell pepper for noses, smiles, or neck bolts.
  3. Build your monsters. Arrange the egg slices on the avocado for eyes, adding olive pieces for pupils. Use the remaining vegetables to create funny, spooky, or surprised expressions. Try olive triangles for Frankenstein's hair, a cucumber strip for a heavy brow, carrot stitches, and red pepper bolts at the neck.
  4. Make each one your own. Give one monster a serious Frankenstein face and another a goofy grin, or let everyone invent their own creature. Serve right away while the pita is still crisp.

Tips & Tricks

  • Use fully hard-boiled eggs. Firm yolks make the eggs much easier to slice into neat rounds. Soft- or medium-boiled eggs can be too delicate for decorating.
  • Take a shortcut. Nellie's Free Range Hard-Boiled Eggs are already cooked and peeled, making this Halloween breakfast even easier to assemble.
  • Think of the ingredients as a decorating kit. There's no right or wrong way to build your monster. Use whatever colorful veggies you have on hand and let the kids take the lead.
  • Choose a sturdy base. Whole wheat pita provides a larger surface area than typical sandwich bread, giving you plenty of room for expressive monster faces.
