Give last night’s roasted vegetables a very good second act. This fall-inspired Egg Foo Young folds leftover butternut squash, mushrooms, Brussels sprouts, or whatever roasted vegetables are hanging out in the fridge into savory egg patties with plenty of scallions. Spoon over a glossy, savory gravy and serve with rice for an easy meal that feels completely different from the night before.
Instructions
- Make the sauce: Combine the broth, oyster sauce, soy sauce, and sesame oil in a small saucepan. Bring to a gentle simmer.
- Stir together the cornstarch and cold water. Slowly whisk the slurry into the simmering sauce and cook for 1 to 2 minutes, until glossy and thick enough to coat the back of a spoon. Remove from heat.
- Make the egg mixture: Whisk the eggs, soy sauce, and pepper in a medium bowl. Fold in the roasted vegetables and scallions.
- Heat 1 tablespoon oil in an 8-inch nonstick skillet over medium heat. Add half the egg mixture, spreading the vegetables into an even layer.
- Cook for 2 to 3 minutes, until deeply golden underneath and mostly set on top. Carefully flip and cook for another 1 to 2 minutes, until cooked through. Repeat with the remaining oil and egg mixture.
- Serve over steamed rice and generously spoon the warm sauce over each Egg Foo Young. Finish with scallions, chili crisp, and sesame seeds, if desired.

Use about 1 cup total of already-cooked vegetables, chopped into small pieces. You don't need to roast anything specifically for this recipe.
- Butternut squash + mushrooms + scallions: My top pick. Sweet, earthy, savory, and really pretty.
- Butternut squash + Brussels sprouts: Peak fall and a great post-Thanksgiving option.
- Mushrooms + Brussels sprouts: More savory and less sweet.
- Sweet potato + mushrooms: Cozy, hearty, and especially good with chili crisp.
- Broccoli + mushrooms: Easy and familiar if “fall vegetables” in your fridge aren't particularly glamorous.
- Roasted carrots + mushrooms: The mushrooms balance the carrots' sweetness nicely.
- Roasted cabbage + mushrooms + scallions: A sleeper hit and probably one of the most savory combinations.
