Crispy outside, creamy and cheesy inside, these easy quesadillas bring together fluffy Nellie’s Free Range Eggs, SOMOS Refried Black Beans, and plenty of melty cheese. Baking the whole batch at once gets the tortillas beautifully golden without standing over a skillet. They’re an easy and satisfying breakfast, lunch, or everybody’s favorite: breakfast-for-dinner.
Instructions
- Preheat the oven to 425°F. Line a large sheetpan with parchment paper.
- Crack the Nellie’s Free Range Eggs into a bowl, season with salt and pepper, and whisk well.
- Heat 1 teaspoon oil in a nonstick skillet over medium-low heat. Add the eggs and cook, stirring gently, until softly scrambled and still slightly creamy. Remove from the heat. They’ll finish cooking in the oven, so resist the urge to cook them all the way to dry.
- Lay the tortillas on a work surface. Spread SOMOS Refried Black Beans over one half of each tortilla, leaving a small border around the edge. Top with scrambled eggs and shredded cheese, then fold the tortillas over to close.
- Arrange the quesadillas on the prepared sheet pan. Lightly brush (or spray) both sides with oil, making sure to go all the way to the edges. This is the key to getting them deeply golden and crispy in the oven.
- Bake for 7 to 8 minutes, carefully flip, then bake another 5 to 7 minutes, until crisp and golden brown on both sides and the cheese is melted.
- Let cool for 2 minutes before slicing into wedges. Serve with your favorite toppings.
Air Fryer Option
Assemble and lightly brush (or spray) the quesadillas with oil as directed. Air fry at 375°F for 6 to 8 minutes, flipping halfway through, until deeply golden and crisp. Depending on the size of your air fryer, you may need to work in batches.
