This Tater Tot Breakfast Casserole keeps the crispy potatoes where they belong: front and center. Instead of mixing everything together, the eggs bake into a rich, savory base layered with sausage, cheese, and vegetables, while the tater tots roast golden and crunchy right on top. Made with Nellie’s Free Range Eggs, it’s cozy, crowd-friendly, and especially good for slow mornings and holiday brunch tables.
Instructions
- Preheat oven to 375°F and grease a 9x13-inch baking dish.
- Heat oil in a skillet over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove from heat.
- Spread sausage mixture evenly into the prepared baking dish. Sprinkle onion, peppers, and cheese evenly over the top.
- In a large bowl, whisk together Nellie’s Free Range Eggs, milk, salt, and pepper until fully combined. Pour egg mixture evenly over sausage and cheese.
- Arrange frozen tater tots in neat rows across the entire surface of the casserole. Do not press them down into the eggs. They should sit on top. (You may not use the entire bag depending on the surface area of your baking dish.)
- Lightly spray tops of the tots with cooking spray or drizzle lightly with oil for extra browning.
- Bake uncovered for 45–50 minutes, or until eggs are fully set, tots are deeply golden brown, and the edges are bubbling. (If needed, broil for 1–2 minutes at the end for extra crispiness.)
- Let cool 10 minutes before serving. Top with green onions and hot sauce if desired.
