It starts with unsalted Nellie's Free Range Butter, which, thanks to its high 84% butterfat, is already as creamy and rich as butters come. The recipe calls for just two more ingredients: agave syrup and a Mexican vanilla bean. While your stand mixer does its thing, the agave sweetens the butter without overpowering it and the Mexican vanilla bean adds fragrance and a gorgeous speckled appearance. Whether you give the finished product away as a gift or enjoy it on a slice of toast, this whipped butter is a must-try.

Ingredients

  • 1/2 pound (1 cup, 2 sticks) Nellie's Free Range Unsalted Butter, at room temperature
  • 1/3 cup agave syrup
  • 1 Mexican vanilla bean

Directions

  • Using a stand or hand mixer with the whisk attachment, whip butter for three minutes.
  • Add agave syrup and vanilla seeds and whip for an additional two minutes.
  • Store in a glass jar with a lid.

This butter looks beautiful in a glass jar or rolled in parchment paper and tied with baker’s twine.

Could you replace the agave with liquid allulose?

Great question Turner! While we haven't tried this ourselves, we have a feeling that the consistency could be off. We do encourage experimentation though, so if you try it be sure to let us know!
