Miniature food always tastes better than the real thing, so it's no surprise that mini pancake cereal has gone down in history as one of the most delicious and adorable internet sensations and TikTok trends of all time! The most common way to eat these fun-size buttermilk pancakes is with a pat of butter, a drizzle of maple syrup, and your favorite fruit, but they can also be enjoyed like a true cereal with milk of any kind.

  • While a pan or griddle preheats on medium heat, fill a squeeze bottle or batter pen with buttermilk pancake batter.
  • Lightly grease your pan/griddle and begin to squeeze small nickel- or quarter-sized dots of batter all around the pan (try working in a spiral pattern, moving from the outside-in to keep track of where you started so that you know which pancakes to flip first).
  • Cook pancakes for 30 to 60 seconds on each side until golden-brown, flipping only once using the small spatula, skewer, or toothpick when the edges look set and the tops bubble and lose their shine. Repeat with all remaining batter.
  • Serve warm in a bowl topped with butter, maple syrup, fresh berries, or milk for an authentic cereal experience!

Nellie’s Notes:

Don't have any buttermilk? Just make some! Before mixing up the batter, combine 1 cup of regular milk with one tablespoon of lemon juice. Stir them together and allow the milk to sit on the counter and sour for about 10 minutes, then continue with the recipe as written.

Do you have an extra festive occasion coming up that requires extra festive pancakes? Add 1 teaspoon vanilla extract and 3 tablespoons rainbow stick spinkles to our classic buttermilk pancake batter to make vanilla confetti mini pancakes that will help any breakfast feel like a celebration. Just make sure the opening in your squeeze bottle is big enough to let the sprinkles through!

Cooking for a crowd? You can double or triple this recipe to fill as many cereal bowls as you like!
