This easy chocolate chip cookie recipe makes the perfect amount for an individual treat to enjoy if you're craving something sweet and don't want to dedicate your day to baking a big batch of cookies. Because when you need a little something but already have one foot out the door (parents, we know you can relate), a soft and chewy cookie for one is exactly what your sweet tooth ordered.

Ingredients

  • 2 tablespoons Nellie's Free Range Unsalted Butter, melted or softened
  • 3 tablespoons light brown sugar
  • 1 large Nellie's Free Range Egg, yolk only
  • 1/2 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 1/4 cup chocolate chips
  • Sea salt and vanilla ice cream (optional)

Directions

  • Preheat oven to 350F and grease an 8-ounce ramekin with cooking spray. Set aside.
  • In a small bowl, mix together butter and light brown sugar using a fork or rubber spatula.
  • Add egg yolk and vanilla to butter and brown sugar and stir to combine.
  • To wet ingredients, add flour, baking soda, and salt and stir to combine.
  • Fold chocolate chips into the mixture and transfer to prepared ramekin. Bake for 20 to 22 minutes or until a toothpick inserted into the center comes out clean.
  • Sprinkle with sea salt or top with vanilla ice cream if desired.

What size ramekin??? Wud be so grateful if you cud be more specific. We are on our last partial package of choc chips & we are high risk so we have not gone out in months. people who shop for us have not been able to find them for us. I don’t want to mess up our last bit of chips by having the wrong size. Please advise. Thanks so much! Love your eggs! 🥚

Can this one cookie be made in a microwave instead the oven?

Hi Susana-- We haven't tested this recipe in a microwave before, but do know there are recipe's out there for microwaved cookies rather than baked. If you test it out using our recipe, we'd love to hear how it comes out!

Took much longer time to cook. Even in a convection oven, it still took me 30+ minutes at 350. Taste was good but the cooking time needs to be longer or the heat higher

Tastes DELICIOUS. However, it does require longer cooking time if you want it fully cooked. Personally, I like it gooey so not a problem for me. I did it in my toaster oven, and the second time I made this I put a piece of foil on top so it wouldn't burn (very close to the heating elements) and loved my gooey cookie with a glass of milk :)
