Asparagus, Spinach and Pea Quiche

Quiche may feel like a special occasion dish, but this one is so easy to make that you'll find yourself drawn to the kitchen on a weekday morning. Filled to the brim with fresh asparagus, spinach, and peas, a slice of easy, cheesy quiche will help you start the day off on the right foot!

  • 6 Nellie’s Free Range Eggs
  • 1/2 cup whole milk
  • Bunch of asparagus spears, roughly chopped
  • 1 cup baby spinach
  • 1 cup frozen peas
  • 1/2 cup cheddar cheese, shredded
  • 1 tablespoon Parmesan cheese
  • Bunch of fresh dill, minced
  • Salt and freshly ground black pepper
  • 1 homemade or store-bought pie crust


  • Preheat oven to 350F. While oven preheats, line a standard pie dish with your homemade or store-bought crust, crimping the edges if desired.
  • Crack eggs into a large bowl and whisk until yolks are broken up.
  • Add milk to eggs and whisk until uniform.
  • To milk and egg mixture, add vegetables, both cheeses, and dill. Season with salt and freshly ground black pepper, then briefly whisk to combine.
  • Pour mixture into prepared pie crust and bake for 50-60 minutes, or until quiche is fully set and golden brown on top.
  • Let cool for 5-10 minutes before slicing and serving.
