It's easy to see why gyeran-ppang (sometimes spelled gyeran bbang) is one of Korea's most beloved street snacks! Korean egg bread is slightly sweet with a soft, pancake-like texture. Before cooking, an egg is cracked into the center of the batter so that when you bite into the warm finished product, there's a wonderfully soft yolk inside. In this air fryer version of gyeran-ppang, the addition of spinach to the batter and sliced ham on top makes for a fun green eggs and ham twist that kids will adore.
