To make the muffins:
- Preheat oven to 350F. Line a standard muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, ground cinnamon, and salt.
- In another bowl, whisk together the Greek yogurt, applesauce, eggs, honey (or maple syrup), and melted coconut oil (or butter).
- Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the diced apple.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of each muffin comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely before enjoying.
