A sweet treat with a protein boost!

A balanced blend of wholesome ingredients and autumn flavors, these apple cinnamon muffins have an added boost of protein to keep you energized all day long! Humanely raised eggs with rich, golden yolks contribute to the muffins' tender crumb, while the sweet apples and warm cinnamon create a cozy, comforting symphony in every bite. Whether you're looking for a healthy breakfast option or a post-workout snack, these muffins are as delicious as they are nourishing.

To make the muffins:

  1. Preheat oven to 350F. Line a standard muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk together the Greek yogurt, applesauce, eggs, honey (or maple syrup), and melted coconut oil (or butter).
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the diced apple.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of each muffin comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely before enjoying.
