  • 1 ½ cups flour
  • ¾ cup old-fashioned or rolled oats
  • ¼ cup brown sugar
  • Zest of one orange
  • ½ teaspoon salt
  • 2 large Nellie's Free Range Eggs, lightly beaten
  • 4 tablespoons (half stick) Nellie's Free Range Unsalted Butter, melted
  • Juice of half an orange
  • 14 ounce can whole berry cranberry sauce (or 2 cups homemade)

Instructions

  1. Preheat the oven to 350°F. Line a square 8-inch baking pan with parchment paper so it comes up and over two sides by about an inch (you'll use this to lift the finished bars out of the pan). Set aside.
  2. In a large bowl, stir together the flour, oats, brown sugar, orange zest, and salt.
  3. In a separate bowl, stir together eggs, butter, orange juice. 
  4. Add the wet ingredients to the dry ingredients, and stir or mix the dough until it's uniform and crumbly. Set aside 1 cup of dough to use as topping.
  5. Add the remaining dough to the bottom of the prepared pan by pressing it evenly into one layer filling any holes. Bake for 10 minutes.
  6. Remove from the oven and carefully spread the cranberry sauce evenly on top.
  7. Crumble the remaining dough evenly over the top (there will be some cranberry sauce showing). Bake for 20-25 minutes or until the topping is light golden brown.
  8. Remove from the oven and let cool completely on a wire rack. Use the overhanging parchment paper to remove from the pan and slice into 12 even bars. Store in an airtight container in the fridge or at room temperature for up to 3 days.
