Apple and banana slices coated in pancake batter and cooked until golden just might be the perfect breakfast: not only are they a vehicle for your favorite pancake toppings (warm maple syrup, anyone?), but they're an easy-peasy way to add a full serving of fruit to your child's morning meal. Similar to the Tik Tok famous pancake cereal, these pancake bites are just plain fun to eat—no matter your age.

Directions

  1. Combine flour, brown sugar, baking powder, and cinnamon in a medium bowl and stir to combine.
  2. In a small bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined. Add to the dry ingredients and stir until just combined.
  3. Place a nonstick pan on medium heat and add a bit of butter or oil.
  4. Dip sliced bananas and/or apples into the pancake batter until well coated. Cook in batches until golden brown, flipping each pancake bite halfway through.
  5. Serve with your favorite pancake toppings and enjoy!

Nellie's Notes

When making the pancake batter, adjust the brown sugar to your liking. If using bananas, which are naturally very sweet, 1 tablespoon should be adequate. If using a tart variety of apple, 2 tablespoons will help balance out the flavor.
